Smoked Meat is Awesome!

Chicken thighs, skirt steak, homemade guacamole, elote and Hatch Chile salsa making for Tacos tonight... it was AMAZING, one of my best meals IMO.

Cooked the meat at high temps on the Rectec, 480*'s for some crispy bits but pulled just above finished internal temps.

Alright @Greg I gotta ask... Do you own any actual plates or only paper products? :rofl:

And y'all are making me hungry... Had the flu since Labor Day, so haven't been able to enjoy any good foods lately.

Did some poor mans burnt ends over the weekend with a couple different bbq sauces, they were very good! I will definitely do them again. I have been hesitant about doing smoked meats w/ bbq sauces, as I always like the smoke flavor without the sauces, but these were really good and I may mess with it more. Did one with Kinders BBQ garlic, and hte other with Jack Daniels bbq sauce. seasonings were whats your beef, and kosmos prime dust.
