Best things for couples in Orlando

I will be in Orlando next week and my wife will be flying out. (after the fishing time!)

Any ideas on some of the best attractions? We are going to hit Universal, I like that place but I also want to find an airboat tour or something outdoors cool. We don't drink so all the wine tasting stuff I see on line isn't of interest. lol

Take the drive to Cape Canaveral <sp?> and see if you can get a tour if you are into space stuff. Other than Disney World, golf, and paying a toll every time i turned around, Cape Canaveral for a shuttle launch was my favorite part of my tip there several years ago.
