Bacula (www.bacula.org) works great if you've got an extra box to run it on (It's linux based).
For Macs I use Carbon Copy Cloner and/or SuperDuper!
Something you need to make sure is whatever you use can handle open files, otherwise your email, if left open, will never be backed up, same with any files that are left open.
