In general, I eat better when I'm camping than I do at home. My regular camping dinner menu items...
Rib eye steak and fried garlic potatoes or sauteed peppers and onions - at least one night every trip and sometimes every night on a trip!
Fried chicken with buttered rolls and mashed potatoes and gravy
Cod, Halibut or Mahi fillet in a basil pesto or chili sauce with fried cabbage
Chicken fried steak with buttered rollls and mashed potatoes and gravy
Terriyaki chicken wings
Pie iron calzones, pre-made pizza dough, pizza sauce, shredded cheese, pepperoni slices, sliced olives, diced onions - I'm starting to do this one on most two night trips that include a campfire, one is a pretty big meal for me
And of course the occasional brats or cheeseburgers
Cherry or apple turnovers in the pie irons for desert
Occasionally I'll take an ice cream ball and make homemade chocolate ice cream - nothi like homemade icecream at the Maze Overlook!
I don't usually cook breakfast and if I do it is only oatmeal. But on longer trips with other people I'll do breakfast burritos for everyone on one morning, or I've even done these for lunch for a crew before. Start by cooking fresh tortillas, then one skillet full of bacon sausage and another full of scrambled fresh real eggs, serve build-your-own-burrito buffet style with fresh hot tortillas, bacon sausage, scrambed eggs, shredded cheese, olives, onions and taco sauce. Never had any leftovers on this one...
