tall, skinny tire suggestions for the tow rig

I need to put new tires on the truck I picked up over the weekend and would prefer a taller, skinny tire for better mpg. The truck is a K2500 6.5 TD with manual trans and 4.10 gears. Nothing too aggressive to keep things quiet, and the wheels are stock Duramax 16x6.5 polished aluminum.

Leave them stock. You'll lose power (torque) towing with a larger tire. Not good with that motor. Also keep it under 75 with that gearing. Cranking the torsion bars will level it out and form up the ride around corners

I have no plans of going over 70, just set the cruise and let everyone pass me.
