Where's the beef?

I found a thread on this from 2006 but instead of resurrecting a 7 year old thread, I decided to start a new one. My wife asked me to cook her some "good" steaks for Mother's Day. So, I'm not shopping for them at Walmart, Smiths, or any other large chain. Where do you go for the good stuff? I'm thinking bacon-wrapped Filet Mignon but Ribeye or T-bone might do as well. I'd like to stay in the Northern Utah County/Southern SL County areas...
 
I know it's a hippie store, but you really won't believe the taste difference in an organic slab of meat from whole foods. I was skeptical at first, but now anything else tastes bland. Also "The Store" in the Holladay area
 
^^ MSQM is the supplier to many Mexican markets, and all BETO's/Rancherito's , as well as Apollo/Atlantis/Crown/Astro burgers they are open to the public too

The best meat I've ever had was in Mexico. A lot fresher than here (though I can't say the same for the corn). Plus they have cuts you can't get anywhere else.

Besides, I'm assuming most of our costo meat comes from Mexico anyway (though I could be completely wrong on this one).

Don't forget I sell meat and have been in a LOT of meat shops... There are some domestic meat shops that I won't by meat from, but honestly seeing shop conditions and the way the meat is handled, I usually skip the carnicerias. :D
 
Ok quick meat lesson. 3 quality levels. Select, Choice, Prime.

Most stores will sell "select" (Macey's, Fresh Market, Smiths).

Choice is carried in "the Store", Costco, some Harmons, and Some Smiths.

Prime is available in custom shops, some Harmons and Whole Foods but you pay for it.

From there you get into the Dry Aged and Grass Fed stuff... For most people going "Choice" is a good upgrade.

OK last meat comment about Mexican beef, its not necessarily the meat its self. Mexicans have a different ways of preparing the meat with rubs and marinades that can take the nastiest, toughest meat and make it tender and tasty. Carne Asada and Carne Adovado are great examples of taking traditional cheap tough meat and making it tasty :D
