I'll start with one of my favorites. I learned how to make this when I was guiding on the Green River with Dinosaur Outfitters. I know it as "River Potatoes". It goes great with grilled chicken.

Items needed:
6-8 Spuds
1/2 Onion
1/2 lb Pepper Jack cheese
1 Quart whole milk

Cut potatoes into cubes. Dice onion. Put both into an oiled 6 Qt. dutch oven. Add salt and pepper. Fill with milk untill it reaches the top level of the diced potatoes. Cover and cook in coals for about 30-40 min. Dice cheese while it's cooking. Add cheese over the top of the potatoes durring the last 10 min of cooking.

your potatoe recipe sounds good........just missing one key ingrediant. Sliced cheddar bratwurst!

Thats basically how my wife makes them and boy howdy!

I do potatoes a little different.

2 - potatoes per person sliced
2 carrots per person
1 onion
can of cream of mushroom soup.
enough water to bring fluid up to an inch below potato top

Cook in dutch oven for about 30 minutes, add cheese and then about another 5 minutes.

The carrots rock. :hickey:

For breakfast I take the cast aluminum (or iron if you're old fashioned ;) ) grilled cheese makers...

Bacon/egg/cheese mcmuffin

Ingredients
Bacon
Eggs (I use egg beaters because they are easier to transport)
Cheese
English Muffins

put a piece of bacon in the sandwhich maker and cook it over the fire for a few minutes...turning regularly. Once the bacon is mostly cooked, open it up and poor some egg in. Put it back over the fire for a minute or so--turning once. Once the egg is done, open it up and put half the english muffin on one side, flip, open, and put the other half of the english muffin and cheese. Put back on the fire to toast the muffin.

Boo ya. Campfire bacon egg and cheese mcmuffin in about 5 minutes.

My favorite trail lunch ever:

Eat at a BBQ restaurant the night before and order extra babyback ribs. Wrap them in several layers of tin foil leave in a cooler overnight. The next morning place in a secure position in a warm place in the engine bay (intake nmanifold works well for me). By lunch time you'll have the most tender ribs you've ever tasted. :)

We do a bunch of manifold cooking, but I only camp once a year so that's not really my area of expertise. BBQ sandwiches are super yummy on the trail. I enjoy a good hot dog though too. :)
