I'll start with one of my favorites. I learned how to make this when I was guiding on the Green River with Dinosaur Outfitters. I know it as "River Potatoes". It goes great with grilled chicken.
Items needed:
6-8 Spuds
1/2 Onion
1/2 lb Pepper Jack cheese
1 Quart whole milk
Cut potatoes into cubes. Dice onion. Put both into an oiled 6 Qt. dutch oven. Add salt and pepper. Fill with milk untill it reaches the top level of the diced potatoes. Cover and cook in coals for about 30-40 min. Dice cheese while it's cooking. Add cheese over the top of the potatoes durring the last 10 min of cooking.
