Ghee packs well, without any special handling. Concentrated butter, basically. Real butter with a more buttery flavor. Easier to fry with than regular butter, takes a lot more heat. I eat a lot of it camping. I even add it to bacon in the pan for extra fatty fat in my diet. It goes good in coffee with heavy whipping cream too.

Smoked 2 racks of ribs on the Treager today.... they are serious better than Famous Dave's or Rib City grill. I can't believe how well they came out, the perfect balance of tenderness. It took 6 hours, using the 3-2-1 method. I'm way impressed....

A whole pork belly diced into cubes, seasoned, smoke for 2.5 hours

What could make bacon better? Brown sugar and butter. Back into the smoke for another 2 hours

Pulled them off and let them sit for a while because Broncos. Back into the box for 15 minutes to let the glaze set.

S&P and season, into the smoke for 4 hours

Internal temperature 165, bring it out and wrap in foil. Back on the smoke until it hits 200 internal temperature

Me too. Just hard to justify dropping the coin for one. Plus there are so many to choose from. I hear that Treager is good but you pay for the name and others are better for less $.

I’m excited. Supposed to be a pretty good rig. How are you smoker guys storing the pellets? I got a 5 gallon bucket and one of those fancy screw of lids but it too small for a whole bag. Looking into air tight dog food containers like this:

The Tri Tip was a little over cooked since our dinner guests were running late. Still very good and a little chimmy churry made it great.
