Aside from the fact that I had never seen any "bulk" food for sale like I do since I've moved to Utah, I do have to give a shred of credit for the thought.
You guys say we live in a world where rescue will come fast, or we can just drive to some other place with resources. But think about what is going on in Haiti right now, and how long it took for rescue in New Orleans. Rescue hasn't/wasn't easy, quick, or without major complications.
Now factor in that some of the towns in Utah are still semi secluded (City Center Eagle Mtn for instance) and you have the chance for long term lack of rescue from worst case scenario events.
But I'm digressing here. I don't have more than the supply that's in my pantry, and that would get me through a couple weeks. From there, I'd either hole up with my neighbors/pillage for food, or hike to the nearest WalMart and ransack their supply
Have gun, will travel.
