Tell me your secrets and your good recipes. I've got a 8, 10 and a 12 inch.....it's time to start using them for once! How many hours does it take to cook stuff? Any coals that work better than others? TELL ALL!!!!-_-
 
Ohhh, I love peach cobbler in a dutch oven! Here's my favorite recipe:

1 C melted butter or margarine
2 C flour
2 t baking powder
2 C milk
2 C sugar

2 options here...Either mix all of it together in something like a tupperware container or batter bowl and take a scraper and pour into dutch oven or mix the butter and milk in a ziploc bag and then the solids in another bag and mix it in the dutch oven. After it's all mixed together, pour into a foil lined dutch oven. Pour 4 15 ounce cans of canned peaches with syrup over the dough. Put lid in and let it cook for about 40 to 60 minutes.

The secret to even cooking in a dutch oven is your coals. Get some nice red hot coals and make a hole in them to sit the oven on and then get a bunch of coals around it. Get the oven nice and hot before you put your food in. Then once the food is in, cover the lid with hot coals to cook the food evenly. MMMMMM. Now I'm hungry! :)

OOHHH!!! Dutch oven peach cobbler:bow: :bow: :hickey:



One of the easy ones is breakfast, (for everyone).
No real recipe here just all your good breakfast stuff.

start with BACON & sausage, then potatoes, onions, peppers, cheese,and any thing else you like, and about five minuts before it's done crack a dozen eggs over the top. Throw the lid back on and OOHH yea. ;)
 
I would beat up small children for dutch oven peach cobbler.

Tell ya what. This summer, once all the snow melts, you should make a road trip out to our little corner of southwestern Colorado. We'll go up to Silverton and Ouray, meet up with Greg and Catherine and I'll make some of that peach cobbler for you. Sound like a plan? :D

Barbecue pork spare ribs,

1 pack smoked bacon cut in 2" strips, brown in dutch oven while warming, 2 large onions mix into browned bacon (you can add whatever other vegetables you want they're just picky at my house), ~4 lbs pork boneless spare ribs (as much as will fit), 3 containers favorite bbq sauce 1 cup brandy. cook for ~2 hrs or until ribs are tender, stirring occasionally.

Dutch oven Potatoes.
2 containers Bacon cut into 2" strips onions cut medium fine red potatoes whatever looks good washed and quartered (peeled if you want), 1/2 cup butter add salt and pepper to taste. cook 30 minutes while stirring. -yummy! add cheese if you want.

See above for dessert.

Same cooking time as conventional oven. rule of thumb 2 above and 2 below, meaning if you ahve a 12" oven 14 brickets on top and 10 brickets on the bottom for around 350*......"rule of thumb". I put on 4-6 brickets on the bottom and load the top, for breads and pastries. Best way is to just cook and learn your oven.
Everything is better in a dutch oven.......

I use to make lots of dutch oven food when I went camping until I made a peach cobbler and added some mtn dew and everyone was up puking all night. Haven't made anything since.

we made breakfast once and it was awesome

only problem was it took almost 2 hours to prepare and cook.

too much commitment for me.

bbq chicken:

use chicken quarters, (leg and thigh together) with the skin on. put the chicken in the dutch oven, put your coals on. two over on top and two under on bottom. (remember the charcoal needs to be hot, you cant just put them on and light them)

i will usually pour a can of soda(sprite, mt. dew, rootbeer, coors, or pabst if you would like) sprinkle some salt and pepper on the chicken. it can take a couple hours. check it but not too often. they say every time you open the lid, it adds something like 20 min. of cooking time. i think i check it at about an hour, rotate the chicken(turn them over, move them from the center to the outside. etc...)

at about 1.5 hours, i dump a bottle of bbq sauce in the oven and let it finish cooking.



helpfull tip. depending on cooking time, you may have to replace small or dead coals with fresh ones. so keep your coal bucket burning while you are cooking. better to waist a few coals than not have enough.

there is nothing wrong with charcoal briquettes. they are more reliable and dont take as long to prepare.

there are many ways to use a dutch oven. suspended over the fire, in the coals of a fire, charcoal, i have a dutch oven that i only use in my oven at home.


dutch oven tip especially for brett: dont dutch oven in the microwave.:eek:

We dont like waiting for coals, so we use wood.

Anyway one of my favorites is Chicken and Rice.

Chicken breasts
Cream of Mushroom Soup
Rice

Then of course the good old standby

Potatoes
Ground beef
Onions
Carrots
Bacon
salt n pepper

And peach cobbler is the best, I've had that before out of a Dutch...YUMMY

what do you mean, your not camping if you use charcoal briquettes? then you are not camping if you use a sleeping bag or tent. for that matter are you camping if you don't start your fire by rubbing sticks together?

i've always been told that regular kingsford is the best. don't use match light because the heat is not as reliable. put a ring of coals under and a ring of coals on top
bbq chicken:
chicken tender strips
your favorite flavor bbq sauce
1 can favorite soda (coke has given us the best flavor)

cook until done- i think it's is about an hour (recommend meat thermometer for chicken)

Your favorite fruit cobbler:
get a cake mix
make the cake mix
pour it into the foil lined dutch oven
pour in 1 or 2 cans of favorite fruit
stir loosely

cook until cake smells done
open lid and use spoon to make sure cake is done throughout
cook a little longer if it is still doughy
(cobbler cooking secret: move a couple coals to the center if the middle is low)

try, try, try. it's all about the fun, no matter what kind of camping you do. good luck

stew is super easy, just like making it on the stove. Throw some stew meat in, add vegetables (whatever you want really), some barley, some tomato sauce, some water, and toward the end if it's too tomatoey add some beef bullion cubes.

I LOVE the breakfast offroaddave as talking about. It's about like stew (meaning you just throw whatever you want in) but for breakfast. It ends up almost like a casserole but DAMN good.

If you are a breakfast person like I am and you like German Pancakes then here is an easy way to cook them. Mix them up like normal (eggs, milk, little salt), then pre-heat the dutch oven for a while, put some pennies stacked two or three high on the bottom, place a round cake pan on them (this allows the hot air to circulate completely around the pan), melt your butter in the cake pan, pour the batter in and let it cook, when it's nice and fluffy you know it's done. :D

Im a big fan of breakfast burritos. Make the eggs, meat, potatos and put them in some nice warm tortias (using the top of the oven inverted as a warmer)

When I'm cooking at home, I throw some chicken breasts on the BBQ for 10-15 minutes. While that's cooking I peel and boil potatoes and carrots. Then throw the chicken, potatoes, carrots, some onions, two cans of Cream of Chicken soup, and a can of water in the dutch oven (I use charcoal in my firepit in the backyard) and then cook it for another 15-20 minutes. Makes for a reasonably quick dutch oven meal and tastes awesome!!
