I didn’t take any pictures of our BBQ tonight but it was awesome. Several pages back someone posted up about their Thermalworks Signals meat thermometer. I got one a couple weeks ago for my birthday and am sold on it!! The thing is amazing. One of the features I love is that it graphs the temperature rise throughout the cook time. Being able to see that helped me see the “stall” coming. I was able to adjust temps and keep cooking. With it hooked to my WiFi I was able to leave the house and still keep an eye on temps. If you want easier cooking you should try one of these.

I watched a YouTube video the other day from alton Brown about cooking a standing rib roast. I almost bought one for turkey day but didn't know how to cook it. With that issue solved I've told the wife I'm doing it for Christmas. It looked freaking amazing and I think I could probably do it on the smoker too.

For Thanksgiving we smoked/roasted a 6.5 pound Prime Rib. It cooked up perfectly to medium rare, but the rest of the meal was not quite ready when the meat was so it rested too long and got a bit overcooked for my liking. Was still good though, even though the horseradish was not hot enough.
We are going to Mesa for Christmas like we normally do to stay with family. My BIL informed me last night that he bought a 22 pound Prime Rib that he wants me to cook up on his Treager. :eek: Can't even imagine what he spent on it.
So the pressure is on big time not to screw this one up. Anyone have an awesome prime rib receipt? Or some good tips? Not sure if this is bone in or out. I'll trim most of the fat and then cook it fat up. The last one I did was uncovered for the first half then covered the second half. I was surprised at how little juice we collected for dipping. We had to supplement it with an Ah Jus that wasn't the best.

Christmas dinner is going to be just us and my father in law who lives downstairs. So 3 adults, a picky 5 year old, and a 6 month old. I was going to get a 3 rib roast (like Alton did in the video I added to my other post) which is way too much for just us but we've been taking Sunday dinner to the 4 Elders who live down the street since they haven't been getting fed since covid blew up and I want to fed them too. I was trying to get an exception so they could eat with us (separate tables or something like that) but so far they still aren't allowed to eat in peoples homes. They told me yesterday they might be getting together as districts for a meal either Christmas or Christmas Eve so my plan might be changing. I don't know still.
