Got it, we boil them to get the skins off and like everything boiled it sucks some of the flavor out. Good tip.You need to peel the skins off the peppers, plus it adds more flavor with the char.

Your not wrong by any means. Tell my mother it's a deer steak and she'll cook it so long it will burn like an old grey aspen.
