I've got really high standards but don't have a place to cook a pizza other than the oven. Otherwise I'd probably take you up on it.

I looked at the Ooni ovens but I figure that if I am going to buy something dedicated I'd want to be able to cook a loaf of bread in it as well and those are too short.

What's the opposite of food 'porn'.... because we had that tonight.

Smiths and harmons by our home were out of brisket, so to walmart we went. I'd heard walmart meat was gross, but can it really be that bad, it's still a cow.

Pretty cheap! That was cool.

I didn't pay super close attention when I pulled it out, but knowing what I do now, there were signs. My understanding is that when meat begins to get grainy like this, it's starting to go bad. Also, it was more slimy than it should have been.

As it got warm, I noticed an obvious corner of the meat that was cooking funny. I cut it off and kept going.
I always throw the cut scraps of fat in the bbq to create fire and smoke.. and the dog loves to eat it after.
This is when things really went south.. the fat would turn into a ball of gross oil-like sludge and then stay charred on
the grill like brittle roofing tar. Very odd, and gross.

Against logic, I kept cooking hoping something would turn out ok.... It didn't. The center would not heat about 150, and it was a hot pink sludge

So I was able to save $20 over the brisket at Harmons. Didn't get to eat any of it. Spent 3 hours prepping and cooking. And now I am hungry and mad.
I did take it back and get my money.. but that doesn't solve the rest of my wasted time and hunger. 😢

I know we always flip you crap for being our cheap friend, but I can’t make fun of this one. Nobody deserves such disappointment as uneaten brisket 😢

Smoked some ribs the other day. Getting the hang of this cabinet/wood chip smoker. Still not my favorite as it takes more babysitting than pellet smokers, but happy with the smoke levels, temps, and results.

Cut each rack in half and cleaned them up, then put a coat of mustard on them, then I grabbed all my different seasonings. Figured I had enough seasonings and half racks to try them all.

In they go for 3 hours. I put an apple juice/water wet bath in as well. I have usually enjoyed apple and orange juice mixes, but really idk if it adds a ton to the ribs?

After the first 3 hours:

Then we get them out and i do butter, and a little BBQ sauce, a touch of brown sugar, and a splash of apple juice. Wrap them up and back in for 2 hours.

Then unwrapped for one more hour.

And done. Ultimately really good. One rub I didn't like, the others were tasty. I need to come up with some awesome homemade bbq sauce. Store bought stuff just doesn't do it, and a lot of times I don't use sauce at all.

I really like "The BBQ Sauce" from Killer Hogs. It might be one to try. BBQ Pit Stop stocks it locally.

Also, where do you buy your ribs? I was going to try cooking some a few weeks back but it seemed like they were crazy expensive for how much meat was there. I ended up buying a half brisket at winco instead.

These ones we got from Costco. Had a good amount of meat on them, and was in a 3 full rack pack.

That looks awesome, I am way too busy/lazy to spend that much time on a meal, but I bet it was delicious!

I agree that sauce is delicious. Next time your there try Blues Sauce, it’s my favorite

Besides BBQ, biscuits and gravy is one of the only dishes I can excel in. Always from scratch, and I like to load the gravy up with rosemary. It’s actually really simple to make and blows any restaurant b&g I’ve had out of the water.

I also decided its time to upgrade smokers. I am selling my cabinet smoker and will be going to a pellet smoker in the near future. Picked up a MEATER+ on Prime Day, so I want to try it out.

what did you pay for the meater? I forgot to look for anything like that.
