Hey all! I was just wondering if anyone had some kick ass recipies that they would like to share. Anything homemade from breakfast to dessert.
I just recently made a green chili stew in our crock pot. O MAN!! It was spicy and delicious and super easy to make. So for those of you who care about food here is my recipe for the stew. :hickey:

2 pounds beef stew meat, cut into 1-inch cubes
2 medium onions, chopped
2 tablespoons vegetable oil
1 can (15 ounces) pinto beans, rinsed and drained
1 can (14 1/2 ounces) diced tomatoes, un-drained
2 cans (4 ounces each) chopped green chilies
1 cup water
3 beef bouillon cubes
1 garlic clove, minced
1 teaspoon suger
1/2 teaspoon salt
1/4 teaspoon pepper
Shredded Cheddar cheese, optical


In a skillet, brown beef and onions in oil; drain. Transfer to a
5-qt. slow cooker. Combine beans, tomatoes, chilies, water, bouillon, garlic, sugar, salt and pepper; pour over beef.
Cover and cook on low for 7-8 hours or until beef is tender.
Sprinkle with cheese if desired.
Yield: 8 servings


TIP: The recipe says that it yeilds 8 servings but, for anyone that eats normal sized portions, this recipe is good for about 4 servings. :D

Yum. That sounds good.

I make a killer rub for steaks or roasts, but I never used a recipe for it so I don't remember what all goes into it. I just grab stuff and throw it all together and pray it turns out. :p My mom did make me write down what I put in it one time, though, so I'll see if she still has it.

Creamy Chicken Enchiladas

3 lbs chicken breast
3 Anaheim peppers, chopped
1 tomato, chopped
¼ cup chopped cilantro
2 cloves of garlic, chopped
2 cup chicken broth
2 table spoons cumin
1 table spoon salt
6 flour tortillas
4 cups Monterey Jack cheese
1 pint of heavy whipping cream

Heat a skillet over med-hi heat while adding the chicken breast, peppers tomato, cayenne and broth. Stir occasionally, making sure that the chicken is cooked completely through. Reduce the mixture down to be used as filler in the chicken (be sure it’s not runny!). This “should” take about 30-40 minutes. Once chicken is cooked, remove and let cool. Remove the broth mixture and place on the side for now.

Preheat oven to 350 degrees at this point.

Shred the chicken breasts up to be used inside the tortillas. Place enough whipping cream in a plate so that you can soak each tortilla in it. Place one tortilla down so that you can fill it with the chicken and broth mixture, adding cheese as you like. Do this with all 6 tortillas, placing them in a pan next to each other. After you have them all in the pan, I like to smoother them with the whipping cream, leaving enough at the bottom to soak into the tortillas as they cook. Cover the tops of the enchilada’s with the remaining Jack cheese, spreading it evenly over the tops.

Place in oven for 30-35 minutes or until cheese begins to turn brown on top. I guess you can add salsa or sour cream if you’d like.

Mom (Jan) Frazier's Beef Kabob Marinade

I've been told I serve a pretty mean tri-tip, so here it goes;

Mom (Jan) Frazier's Beef Kabob Marinade
1/2 Cup ketchup
1 teaspoon salt
1/2 teaspoon pepper
2 Tablespoons sugar
2 teaspoons mustard
2 Tablespoons soy sauce
1/4 Cup wine vinegar
2 Tablespoons worchestershire sauce
1/4 Cup lemon juice
2 Tablespoons salad oil
1 teaspoon parsley (flakes)
1 crushed garlic clove

Combine, mix, and pour over tri-tip (any quality cut of beef). Marinade for 24-48 hours. Grill on a medium high to high heat BBQ. Baste meat with remaining marinade. Don't be afraid to put a little burn tinge on the meat, adds flavor to it. Enjoy!!!

Hmmm... good recipes, huh?.... Well I like to keep most of my recipes a secret, otherwise everybody would be as cool as me! ;) j/k

Umm... let's see here..... how about some desert....

Since I'm not ready to give up my cheesecake recipe we'll have to settle for:

Better Than Lotsa Things Cake

1 pkg Devils food cake mix (any brand)
3 eggs
1/3 c oil
1/2 c water
1 can sweetened condensed milk
1 can/bottle butterscotch or caramel sauce
1 container cool whip (or whip cream if you like)
Heath bars or a bag of skor toffee chips

Ok... SUPER easy... bake the devils food cake according to directions. (I always beat the cake mix longer to make it more airy which allows for more of the topping to sink in) Let the cake cool for about 10 min or so and then poke holes in it with a fork or chopsticks or whatever and then pour the sweetened condensed milk all over the cake. Next, pour the can/bottle of butterscotch or caramel over the cake. It's usually better to do this when the cake is warm then it helps it melt into the cake. Let the the cake sit (in the fridge) for a few hours or, even better, overnight. Before you serve the cake cover it in cool whip/whip cream and sprinkle crushed heath bars or toffee chips on top.

I know, sounds kinda weird, but trust me, it tastes AWESOME! :freak:

Pasta "Pizza"

For the "pizza":
1 tablespoon olive oil
1 small green bell pepper, sliced into thin rings
2 cups cooked capellini (angel hair pasta) (see recipe below)
Tomato sauce, store-bought
1/4 pound whole-milk mozzarella, thinly sliced
10 thin slices pepperoni
Fresh basil sprigs, for garnish
In a non-stick skillet, measuring 10-inches across the bottom heat the oil over moderate heat until it is hot but not smoking, in it cook the bell pepper rings for 30 seconds on each side, or until they are crisp-tender, and transfer them with tongs to a plate.

To the skillet add the capellini, distributing it evenly and pressing it lightly with a lid that fits into the pan, touching the pasta directly, and cook it, over moderate heat for 25 minutes, or until the bottom is golden. Invert an oiled baking sheet over the skillet, invert the capellini crust onto the sheet, and slide it back into the skillet. Cook the capellini crust, covered, for 10 minutes more.

Spread tomato sauce over the crusty pasta, leaving a 1/2-inch border, and arrange the mozzarella on top. Arrange the bell pepper rings and the pepperoni on the mozzarella and cook the pizza, covered, over moderate heat for 3 minutes, or until the mozzarella is melted. Slide the pizza onto a pizza pan or flat platter, garnish it with the basil, and with a pizza wheel or sharp knife cut it into wedges.
Capellini:
1 pound capellini (angel hair pasta)
1 tablespoon butter
Salt and freshly ground black pepper

Bring a large pot of water to a boil. Add salt and pasta and cook for 2 to 3 minutes, or until just al dente. Drain and toss with butter, salt, and pepper.

Yield: 4 servings


Stuffed Mushrooms

12-18 mushrooms
1/4 cup chopped onion
1/4 cup chopped green pepper
1/4 cup chopped celery
3 Tablespoons butter
1 (3-oz) pkg cream cheese
1 Tablespoon lemon juice
1/2 tsp salt
1/8 tsp pepper
1 cup soft bread crumbs

Wash mushrooms and remove stems. Set the mushrooms aside to dry. Chop stems. Saute the chopped stems with butter, onion, pepper and celery. Then add cream cheese, lemon juice, salt, pepper, and bread crumbs. Place a mound of stuffing on each mushroom. At this point you can either microwave them for 3-4 minutes, or, bake at 350 until mushrooms are tender, about 7-10 min.


Chicken Cordon Bleu

6 boneless, skinless chicken breasts
6 bacon strips
3 c. grated cheese
12 pieces sliced ham
3 (10 oz) cans of cream of chicken soup
3 (10 oz) cans of cream of mushroom soup

In a 9x13 pan, lay one strip of bacon down. Place two pieces of ham on bacon. Top that with 1/2 c of cheese and place chicken breast on top. Fold ends of bacon over the chicken and pinch ends together. Repeat with remaining chicken breasts. Mix both soups together and pour over chicken breasts, making sure the chicken is well covered. Bake at 400 for 1 hour 15 min, until chicken is cooked through.

Pork Egg Rolls

1/2 to 1lb pork loin, shredded.
1 tsp rice vinegar
1/3 tsp salt
1 tsp cornstarch.
Mix all ingredients together and let it sit to marinade 20 minutes - 24 hours. Stir fry over high heat. Remove from pan.
4c bean sprouts
1/2 c shredded carrots
1 tsp salt
1/2 tsp sugar
1/4 tsp pepper
1 tsp sesame oil
1 pkg egg roll wrappers
Stir fry these ingredients and then add to pork mixture. Place 1-2 Tbsp filling in center of each egg roll wrapper. Roll egg roll up: bring bottom of wrapper up, then fold sides together, then continue rolling toward top. You can seal it if you wet the edge of the wrapper with a bit of water, but it's optional. Fry the egg rolls in an inch or two of oil until golden brown. Drain on paper towels. Serve hot with optional dipping sauce:
Egg Roll Dipping Sauce
1 T ketchup
1 T worcestershire sauce
1 T chinese soy sauce (not japanese)
1/2 tsp minced garlic
1 tsp hoisin sauce
Mix it all together and enjoy


And, last (for now) but certainly not least, my favorite:

Sushi rolls

1 pkg dried seaweed
4 oz raw seafood (salmon, tuna, or crab are my fave)
2 c sticky rice
sliced carrots
sliced cucumber
sliced celery
sliced spinach
soy sauce to taste

Place a thin layer of rice across 1/2 of a sheet of seaweed. Add desired seafood and/or veggies. Roll the seaweed up, starting with the side you covered and moving towards the empty side. Wet the outside 1/4 inch of seaweed with water so it sticks to itself when wrapped. You can eat it like a burrito, or cut it up into nice little pieces. You can either pour on enough soy sauce to taste on each bite, or put it on before your roll it up if you know how much you like.

Here is a really good lasagne recipe. There is tons of room to add in your own ideas to the recipe. Also I substituted ricotta cheese for Cottage Cheese becuase it is healthier. It still tastes really good though.

LASAGNE

1 pound ground beef
½ tsp. minced garlic
1 tbsp. basil
1½ tsp. salt
1 1-pound can tomatoes
2 6-oz cans tomato paste

Brown meat slowly; spoon off excess fat. Add next 5 ingredients. Simmer uncovered 30 minutes, stirring occasionally.

10 oz. lasagna noodles

Cook noodles in large amount boiling salted water till tender; drain; rinse in cold water so can handle.

2 eggs
3 cups cottage cheese
½ cup grated Parmesan cheese
2 tbsp. parsley flakes
1 tsp. salt
½ tsp. pepper
1 pound mozzarella cheese, sliced very thin

Beat eggs; add remaining ingredients, except mozzarella.
Layer half the noodles in 13x9x2 inch baking dish; spread with half the cottage cheese filling; add half the mozzarella cheese and half the meat sauce. Repeat. Bake at 375 degrees about 30 minutes (or assemble early and refrigerate; bake 45 minutes). Let stand 10 minutes before serving. Serves 8 to 10.

It's pretty flavorful...I've been working on getting some more zest out of it, since it seems like you lose a bit of the flavor when you simmer all the veggies. Maybe try hotter peppers than what I wrote there!

Here's another that I found on another forum a while back....haven't had a chance to check it out yet though. Looked good from the pics the person had posted though.


1 chopped onion
2 tbsp. vegetable oil
1 tsp. each chili powder, garlic powder & ground cumin
8 oz. cream cheese
6 c. shredded, cooked chicken (2 lbs.)
3/4 c. bottled salsa
8 oz. cheddar cheese, shredded 92 c.)
1/4 c. chopped black olives
16 corn tortillas
2 cans (14 oz.) enchilada sauce

Heat oven to 350 degrees. Have 2 (11 x 7 inch) baking dishes ready. In large saucepan cook onion in oil for 5 minutes or until translucent. Stir in chili, garlic and cumin. Add cream cheese and cook, over low heat, breaking cheese into chunks with wooden spoon, until melted. Add chicken and salsa. Stir over medium heat 2 to 3 minutes until hot. Remove from heat. Stir in 1 1/4 cups of cheddar cheese and olives. Wrap tortillas in stacks of 8, in foil. Heat in oven 8 to 10 minutes until warm and pliable. Spread 1/4 cup enchilada sauce over bottom of pan. Spoon 1/3 cup chicken mixture in each tortilla. Roll up and place seam side down in pan. Bake 20 to 30 minutes.

Any ideas for hamburger dishes (for some reason, my wife buys a lot of that and neither of us like to cook with it----don't go there, I've done it a few times before and it's not pretty)?

You could always do Mexican pizza's with hamburger.

My dad used to make some pretty good burgers by adding Worschestershire sauce and chopped onions to the mix.

yeah :) I love to cook. From age 10-13 or so I got out of doing the dishes by cooking. :cool: I've got plenty of recipes, I just didn't want to scare ya'll at once. :p More will be coming.
