I take my tri tip to 125-130 and let rest and cool in the fridge overnight. Eat it cold the next day with chimichurri :)

If you love your hatch peppers and garlic, I have your burger/fry sauce.
You will need hatch chile powder (dried, red hatch chiles; Harmons should start carrying it soon) and crushed hatch chile peppers (I get 505 brand from grocery stores and others from Costco).
The recipe:
40g Mayo
10g crushed garlic
1 tsp chile powder
2 heaping TB crushed chiles, drained well on a paper towel
1/2 tsp black pepper

Stir and let sit a while before use.

This will register in your progeny's DNA, I promise
 
Epic food porn fail:

I loved Moochies Philly cheese steaks ever since they started in the Circle K pottery shop. They have gone down hill pretty badly the last few years. Today’s philly is a fail. Probably the last time we will order from them. I added the jalapeño sauce and the extra jalapeños (also extra $).

Yeah its been since 2020 that I've been up there so I'm not sure if its still around. They always had weird hours but it was worth the drive from downtown for a tasty lunch.

Moochie's also stopped offering their sausage and peppers sandwich. :mad2:
 
Someone just needs to throw the philadelphian in the mix with some english chips to really show you guys what a real cheesesteak is. :D
I’m also a fan of that place. I miss Joni’s (sp?) on 17th S and Main in SLC. That was my favorite cheesesteak ever. When they closed a part of me died

Philadelphian is legit. However, the grease pit freaks me out in my old age. In my 20's I didn't even think twice.

Are at the philadelphian a month ago. Good but agree that the hygiene of the place could use some work. Always let the deep fried mushrooms cool down before eating 🔥🔥🔥
 
Smoked and reverse seared tri tip with wagyu beef tallow. The short ribs are getting some nice pull back.
