When I make them I call them Lion House potatoes because that's where my grandma got the recipe from and I use fresh whole potatoes and grate them myself. Funeral potatoes invariably use frozen hash browns and are gross. They usually have some half assed out of a package topping too.

When making potato dishes the potatoes you use matter, a lot.

I get genuinely pissed if anyone calls my Lion House potatoes funeral.

I guess it thickens the potato skin and shrivels/shrinks the green waste part of the plant at harvest time.
