I TIG weld stainless turbo pipes pretty often, but I have never welded with stainless MIG wire. Stainless doesn't weld too much differently than mild, other than it loves to crater at termination, so be aware of that. I would just get a stainless hardwire and try to match the alloy to that of...

Have you tried these? These discs are incredible. 5" diameter 36 grit with the 4.5" flexible rubber backer (Dewalt part). They can take a weld down flat and smooth it out very nicely much faster than a flap disc, and they last a long time. I get em from Home Depot.

:rofl: It's not plastic! It's very soft stretchy rubber and its filled with some sort of water(y chinese toxic waste.) I'm not even joking it was the best stress ball ever! and it didn't have a smell. I think the one I got was slightly smaller, maybe slightly larger than a baseball.
